There could be several possible answers to this question, but all of them originate in early youth, between birth and around the age of five. These answers all refer to the contents of a person's individual internal image set which were created in this time of "social birth", in the case of Freudian images and at the time of conception for others.
All of us have such an image sets, however, some people are more aware of it than others. These image sets play a role in all male/female attraction. A great deal of information has been written concerning Freudian images and many people are familiar with them. More obscure are other inner images that affect male/female relationships. The great psychiatrist, C. G. Jung called this important group of images the Anima (if the image is found in a man) or the Aminus (if the image is found in a woman). These internal images are the result of Biology. Unknowingly projecting these images on others can lead to much misery if the other person does not return the attraction. This unknowing projection is often the source of unrequited love.
These are some of the reasons why we find certain types of people more attractive than others. If you want to establish more control over this aspect of your life a good place to start is understanding the processes I've described above and realizing how they have effected your choices.
It could be for several reasons why younger men like older women. Different guys have different fantasies. Being with an older women is fantasy or even a fetish for many guys. Another reason is a man might feel more secure about himself since he's younger. He's not competing with men in his bracket.
