cause you dont turn of the engine so there for its on but you need to rev a bit so then u have aa bit of smoke

If you are driving a loaded tractor trailer, you would downshift to gain more power when going up hill and downshift to control speed when going down hill.
gravity is the one to blame . gravity pulls down the biker closer to earth so it goes faster going down and slower going down
Yes, most definitely it will roll down the hill. When parking on a hill always set the parking brake. The park gear in an A/T can break, so do not take a chance. In drive the car will roll if the brake is not set.

The piston rings are probably worn out. The old mechanics' rule is, if it smokes going up the hill its the rings. If it smokes going down the hill, its the valves.
Brake rotors may be warped.
Sounds like your brake rotor are warped, a brake shop should be able to turn then (smooth them out) for you if there not too bad. do you feel a little shake at during normal breaking? if so then that could be the problem, but because your were going down hill it take more force to slow down so you feel it more.
