The general answer to what affects how accurately you perceive others is your preconceptions and notions. One is the way Will Smith reacts on the shooting range in the film Men in Black. All the other participants fire at everything there (the "monsters"), and Officer James Edwards (Smith) only takes the one shot (at the little girl). He saw things differently than the others, saw "past" appearances there to something that he felt was more important in the situation.
Learned behaviors are picked up through observing the behaviors of others. Different people pick them up differently because as individuals, we have our own perceptions, personalities, outlooks toward the behaviors we observe, and reactions to those behaviors. For example, children growing up in an abusive family might become abusive while their siblings might not.
The way you view things in society (like what is right or wrong and what is appropriate behavior for females vs males) is because of the way you were raised to perceive things and also experiences you went through growing up.

That is a matter of personal preference as some people would perceive certain colours differently and a colour that one person sees easily may not neccesarily be as easy to perceive for another person.
