So that concentration during prayer is not disturbed by focus on the opposite sex, also so that the synagogue should become a place for flirting, which would be disrespectful to the holiness of the place. Although mingling after the service is encouraged, and it is a great way to meet a potential spouse.

This is the traditional practice, and is followed in Orthodox synagogues. It is done for concentration and focus*. Other branches of Judaism do not follow this practice.

*Note. For gay men who attend Orthodox Jewish services, this practice is challenging and counter-productive. These men often use their tallit (prayer shawl) as a hood, which blocks their peripheral vision for focus.
