The octopus changes it's color to camouflage from it's predators. It will change colors sort of like the chameleon which is a lizard fond in continent of Africa octopus will camouflage in different places such as the places it lives in. Also in places like coral reefs, "blankets" of seaweed, oyster beds, etc.

They change color because they need to be blended into there to their sorroundings. So when the prey comes near it wont notice them. They also change color to ward off and confuse predators by turning bright poison-like colors.
