Why do people answer a yes or no question with something other than a yes or no?

Because an answer cannot always be simply yes or no, even if you want it to be.

Why do you only answer in 3 words?
Some people only answer in three words because that is all is needed to answer a question. If the question is a yes or no question, you really don't need more than a few words to answer the question. Usually, even when the question is asking if something is better than the other, it could be answered with a simple yes or no.
