Mardi Gras is French for "Fat Tuesday" and is the day before Ash Wednesday, which is the day Lent begins. During the Lenten season people usually give up something they like, for example a coffee lover gives up coffee, to represent when Jesus gave up food and water for forty days. People also will fast on certain days and give up certain foods, for example in the Catholic Church meat is given up on Fridays. Abstinence is sometimes practiced on certain days of the Lenten season. It is called "Fat Tuesday" since people usual gorge themselves with things they may otherwise have to give up for the following forty days.
