Polar bears require huge amounts of energy to maintain their body temperature in the cold, and they must build up fat reserves to do that. Seal blubber is optimal food source for them because their blubber is so rich in calories and fat.
The harsh habitat has a lot to do with polar bears' food choices. There aren't many plants to eat, since they live on packed snow. The eat fish IF they can get to them. But mostly, seals provide a nice warm meal with plenty of fat and nutrients. They would eat any other small game, if it is nearby.
