Popcorn pops because the small amount of water in the kernel vaporizes as it heats up. The resulting popped corn weighs less than the original kernel because the weight of the water is no longer in it.

Also, the resulting of the steam popping open the kernel the steam loosens and softens the dense carbohydrate part (the white fluffy part) of the corn kernel itself which decreases the density of the carbohydrate (white fluffy part), and less density decreases the weight. :)

The moisture in the kernal is what make an unpopped kernal weigh more than a popped kernal. When you open a bag of popcorn that you just finished cooking in the microwave you should notice right away that steam comes out of the bag. That steam is the moisture that was in the kernal and, in most cases, the butter. If you leave that bag sitting for 5 minutes it will be even lighter than when you took it out of the microwave because of the moisture leaving the popcorn.
