The image of an empty cross is symbolic of Christ's death and resurrection. Without the resurrection the life and death of Christ is of no use to anyone. Everything Jesus did and said make no difference if He didn't rise from the dead. A dead Christ can't save anyone. For these and many more reasons many churches choose to use an empty cross as a symbol of Christianity's highest ideals.

Therefore the empty cross symbolizes the risen Christ.

Further, the Roman Catholic view of Mass posits the idea that in each celebration of the Mass Christ literally performs a sacrificial activity that is mediated through the church and sacraments. In this way, the redeeming work of Christ is considered to be ongoing through the Holy Roman Church. Therefore the crucifix pictures Christ's body still hanging on the cross.

Protestants, however, take seriously texts like Hebrews 9:25-28 which reveals that the cross is a one time, non-repeatable event...that Christ is now seated with the Father and waiting to return in judgment of unbelievers and deliverance of believers. This is not to take our need of continual cleansing lightly but instead rests upon the sufficiency of Christ as an atoning sacrifice on the cross. So, continual cleansing is premised upon the completed, all-sufficient sacrifice of Christ. The empty cross of Protestantism is a symbol that there is neither a need or possibility that Christ nor any other must "occupy" the cross again.

Why do some Christians have Jesus on the cross and some don't?

To symbolize that Christ died for our sins and rose again as well as the fact that He died on the cross.Roman Catholic AnswerThe Church requires that there be a Crucifix (a cross with a corpus {Christ's Body} on it) to celebrate Mass which is the re-presentation of Our Blessed Lord's Sacrifice on Cross. Please note, that although Easter proved Our Blessed Lord's victory over sin and death, it was His Death that actually accomplished our salvation; and it is His Death that gives us the grace (through Holy Communion) of following in His Footsteps.

Why would Christian denominations prefer to use the cross to the crucifix?

Many Christians find it offensive because Jesus has risen from the dead and lives. This is the symbolism of the empty cross. Also some churches teach that Jesus is re-crucified or sacrificed in the Lord's Supper, despite the fact that the Bible says He died 'once for all'. They may see in the crucifix a suggestion of this doctrine that they regard as false.
