Natural flow of water erodes the softest areas of a channel first. Over time (floods, heavy rain) deeper cuts in the softer areas occurs quicker and soon the force of the water flowing into a cut out area cause faster moving water to change its natural course and thereby flows against soft materials on an opposite side. This side to side movement causes more erosion and soon there is a marked difference in the curvature of the river.
