The skin on the sausage is pretty much sealing the moisture of the sausage inside.

When you heat it in a fryingpan, then sooner or later the moisture inside the sausage will go beyond boiling point and give off steam.

With no means of escape, the pressure inside sausage will build up until it burst.

As the liquids and juices inside the sausage heat up, they expand. Eventually, they expand so much that they can't be contained within the sausage. At this point, they force their way out of the sausage as both gas and liquid. This results in the splitting of the sausage.

Primarily because the casing shrinks when it is cooked and this exerts pressure on the filling which bursts out at the weakest point of the sausage which is at the ends. Because the sausage is not tied off between each link they are effectively open at each end.
