I personally think that animals have big ears because they can hear carefully like if a predator is sneaking up to it's prey then they would be able to escape.

On a whole, the animals that have small ears live in cold places. They have adapted to have small ears to reduce surface area. The smaller the ear, the less skin is exposed to the cold, so the loose less body heat.

Other creatures use their large ears as a means of regulating their blood temperature - elephants are a prime example - as they can fan their ears back and forth and cool the blood vessels there. They have a greater percentage of their blood in their ears than animals with proportionately small ears.
