Leaves have different pigment molecules that are necessary for the process of photosynthesis. The pigment molecules reflect different colored wavelengths from the sun. For example Chlorophyll reflects green wavelengths. The reflected wavelengths reach eyes and cause the leaf to be different colors.

The trees change color in winter (some trees) because the temperature inhibits the synthesis of chlorophyll and therefore the carotenoids or the xanthophyll pigments become in excess in comparison to the chlorophyll resulting in giving different color to the tree.
Because in order to prepare to fall, leaves start to break down chlorophyl, their main light absorbing chemical, which has a reflects green light. As it breaks down, other pigments which reflect other colors are easier to see.
Red and Blue light is absorbed by chlorophyll, the pigment that transforms light energy into chemical energy in photosynthesis, so that the light that is reflected off leaves appears green.

Many plants are chosen for their "foliage" or leaves, rather than the flowers. When you have a plant with decorative foliage, it means that the leaves are interesting. Some have different colors, spots, stripes, texture.
Definitely do bold Autumn colors. Red-orange, orange, auburn, brown, colors like that. You can get leaves of these colors and attach them to your walls, or you can put pumpkins (can be fake) with some brown vines or something and arrange them on the side of the hall to make it look like an enchanted passageway.
