There is no set amount of sperm although the average is 5ml on each ejaculation. Some will be able to produce more and some less. There are millions of sperm cells in each ejaculation to give a good chance of one fertilising the female ovum.
Nature tends to overkill when it comes to reproduction. Look at an Oak tree and how many acorns it produces. By putting so many potential chances out there of continuing a species some have to survive. So many sperm improve the chance that at least one will make it.
