However, since hummingbirds are so quick, it is rare that a tarantula or other spider will actually catch the bird; usually, an injured or sick hummingbird is found, and the tarantula takes the bird back to its web, where it finishes the job.

Since the reaction time of a Tarantula is much faster than a bird - it makes them 'easy prey'. No point in spending energy hunting on the forest floor - when there's a 'ready meal' in the canopy !
