Because they are growing more food than before, and Farmer Jones had never given them enough food. They also have the sense that they are controlling their own lives, even as the pigs begin to dominate their society.

That was a main reason why Mr. Jones came back to fight against the animals --- he wanted back what should belong to him. However, in the book, the animals threw away everything that reminded them of Mr. Jones. It was because under Mr. Jones' rule, the animals suffered torture and hunger. It was a period of sad memory for them and they hated Mr. Jones to the core. Hence, they burned everything that reminded them of Mr. Jones and destroyed all the whips, chains that he used to torture these animals. They wanted to totally get rid of Mr. Jones.

We all like to think that we know what is better for domestic animals, not so much for the wild ones, this would come under the category of survival of the fittest.
