Because it was originally made in Boston. A true Boston Butt (Pork Shoulder) is usually made in Boston.

Actually the name originated in the other regions outside of Boston pre-revolution. The less expensive cuts of pork were often packed and stored in "butts" (commonly known as casks or barrels). The way the shoulder was cut and packed in Boston led to the name. Today the name refers to the cut of meat (front shoulder) not how it is cured or prepared.

A whole pork shoulder is cut into two pieces for processing (slicing) in a meat market. The end that has the "arm" is called a "picnic ham", or just "picnic", and the shoulder blade part is called a "Boston butt". I know this doesn't answer the question as to why the pieces are called like that, but I just thought I'd pass along the information.

A pork shoulder is called a "Boston Butt" because they are originally made in Boston. A real Boston butt is usually made in Boston. Just remember: They are NOT real butts. I thought they cut people from Bostons' butts off and ate them!! :)
