There are 3 reasons for the cut actually.
The first reason, no longer a real need, is because at the creation of the breed, they were bred for combat purpose. And the ears are just an unnecessary risk of injuring the dog by having his ears ripped. Which was way more painful than properly cut under anesthesia.
The second reason, once dog fight have been declared illegal in civilized countries, is only for the look. It is true that many breeds, like the doberman, is utterly ugly with its elephant like ears , but such a beauty once cut.
The third is because many breeds have the ears cut as a breed standard in shows and in the breeding rules.
