In Provence on December 4th, wheat (sometimes lentil) is planted on damp wool in 3 saucers to represent the Holy Trinity. By Christmas Eve the seeds have germinated and the saucers are decorated with red ribbons and placed on the table to accompany the Gros Souper.

In other parts of the world this is associated with the feast of St Lucy on Dec 13th. In Hungary the children take the wheat to place in the Nativity.

The new wheat symbolizes the new bread of life.
