Droplets appear on a glass of water because of condensation. When the air touches the cold glass, it turns into a liquid, forming a droplet. This is because, when you add heat, a liquid turns to a gas, but when you take away heat, it turns back into a liquid.
If warm moist air comes into contact with the cold outer surface of a glass of water, condensation takes place.

When the cold glass is exposed to the air, the air touching the glass gets cold, is no longer able to hold as much water and the water in the air condenses (comes out of solution) on to the outside of the glass.
