We baptize babies in the Catholic Church because we have always done so since the very first when The Bible records that adults got baptized "along with their whole household." Since the fall with our first parents, every single human being (saving Our Blessed Lord, and His Mother) have been born without sanctifying grace, with original sin. And Our Blessed Lord commanded that we bring the little children to Him and do not hinder them. Baptism wipes out original sin, and restores sanctifying grace allowing the child to grow in holiness. Circumcision in the old covenant was done on the eighth day, and this was a foreshadowing of baptism. Without baptism, a child can receive none of the other sacraments and is denied sanctifying grace; thus we incur a very serious obligation to baptize infants as soon as possible.
