If you were to use just water, you would not have either freeze protection or overheat protection.
Water freezes at 32 degrees. Antifreeze could protect engine to -20 to -30 degrees.
Water (with no pressure) will boil at 212 degrees. Antifreeze will delay "boil-over" to a much higher temperature (I am not sure of number)
