You need the large intestines because, they absorb water, and vitamins makes sure the body gets gets it. It also processes undigested food and what not, and holds waste before it gets eliminated.

They are needed to breakdown food via bile and other enzymes. We also need them to absorb nutrients that our bodies live off of. The small intestines are the main site of food breakdown and nutrient absorption. All our stomachs are is a place to store and churn the food to get ready for the breakdown and absorption in the small intestines. The large intestines are mainly for some B vitamin absorption and to reabsorb the water that our bodies need, leaving enough for an easy defecation (poo).
