Typically, recipes say to beat the eggs, because if you were to simply stir them in, the final product would not be as light as it would if you did beat them. Incorporating air into eggs will allow the product to rise, have a lighter texture, and appear to be lighter. This is because when you are beating them, you are causing air bubbles to get caught in the egg mixture.
