Such a wonderful question to ask, might I say. God created birds to fly in the air, and to spread seeds across the wide green earth. Also, it mentions a lot in The Bible that God loves the birds, more than any other animal. If we go back in Genesis through revelation, we see that birds are mentioned more than any other animal there is! But still, He enjoys all animals.

To serve as food To eat various insects and small animals, keeping their populations in check
To serve as symbolism for various concepts such as angels and freedom
To give one more example of His vast wisdom
To serve as a model in our inventing manned flight (shape of wings' curvature)
To serve as couriers (carrier pigeons)

Well before god created "birds in the sky", his cousin Darwin, the lesser god of irony, created a sea of carbon based sludge from which dinosaurs and other creatures sprang forth. Feeling somewhat jealous, and not wanting to be outdone, god smashed all of Darwins toys to bits and claimed the earth for his own. This is where the bird part comes in.
