I think they chose it because it had been a Roman symbol and there was a great deal of identification with the Roman Republic and because it is a beautiful and majestic bird. I don't know if you mean his battle standard, if that is what he chose, but I can imagine the reason he chose the eagle is because it is a predatory bird that once it has its sights set on its prey, it ALWAYS gets the kill. Always, without fail; among birds, the raptor family are the most formidable predators in the animal kingdom. They have I think somewhere along the lines of 99% success rate when hunting prey and making kills. If Saladin chose the eagle as his battle standard, that was probably the reason.
