well they've been eating a long time, so by now they should know if you don't eat the roots, it will grow back and you can eat more. and who knows? maybe leaves taste better. plus sometimes its hard to pull the weeds out with a human hand, but a pest is way weaker than us. also when you dig a root and eat it, you'll be eating dirt.
