Because East is thought to be the "holy direction": For example, the sun, which is the light of the world, rises in the East; Jesus was crucified facing the East, and the Tabernacle that existed in the desert in the Old Testement faced East.

Churches in England generally face East, reasons given are so they face the direction of Jerusalem (Jerusalem is actually South-East of England), also because synagogues faced East and in order that the stained glass could be shown off to full effect. There is some discrepancy over whether facing the sun is a valid reason or not.

Orthodox churches also face East, I believe this is to do with the second coming of Jesus (peace be upon him) being expected from the East.
