This can only be artistic license. It obviously could have fallen to the left or forwards as well. Obviously if forwards, then the face would be obscured and this would be unacceptable from many an artists perspective. Perhaps there is some idea that 'left is bad' or else some famous artist started this 'tradition' which has been followed ever since. There would not appear to be any historical basis for it, certainly not from the four Gospel accounts. They were of course most interested in the fact of Jesus' death, not in where the head turned afterwards.

Where the head is, according to the artistic depiction, may also relate to other subject matter in the painting. Jesus' head may have been turned towards some onlookers also depicted in the picture and He is certainly recorded as speaking to people shortly before His death. Thus if the artist has put these people on the right side, Jesus' head would already be turned that way. In any case, this is all part of the artistic craft.
