When the water starts to crystallize, the freezing pushes out the sugar syrup (which is where the color resides) and that's what accounts for the snow-white water layer and the dark brown sugar-syrup layer.

We had some G2 in the bed of our truck....and it turned clear...and had a funny taste. We didn't drink it just to be safe. I'm not sure if it would have hurt anything? The purple stayed purple...but red and orange faded.
