Romeo begins speaking in poetry when he meets Juliet because he is captivated by her beauty and is expressing his deep emotions. The subplot in "Romeo and Juliet" begins in Act 1, Scene 2, when Paris expresses his desire to marry Juliet to Lord Capulet. This subplot revolves around the arranged marriage and the subsequent events leading to Juliet's secret relationship with Romeo.
To begin with? He has an unrequited love of Rosaline but forgets about her when he meets Juliet who he then wants to marry.
Romeo and Juliet opens with the 'Chorus' telling about Verona and the feud between the Capulets and Montagues. Then, two servants of each house begin to argue and eventually pull their swords. :)
As unlikely as it may seem that people would spontaneously express themselves in rhyme, that is the intent of all of Shakespeare's rhyming lines (and they occur in most of his plays). There is no suggestion that Juliet (or Romeo for that matter) had learned the lines beforehand. On the contrary, the suggestion is that their passion is so great that it spontaneously expresses itself, not only in rhyme, but in sonnet form. This is the opposite of a disguise. It is a revelation.
In Act 2 of Romeo and Juliet, the main plot points include Romeo meeting Juliet at her balcony where they profess their love for each other, the two lovers deciding to get married the next day, the secret wedding ceremony conducted by Friar Laurence, and the escalating feud between the Montagues and Capulets.
Romeo and Juliet meet the Capulet's feast. This party is mascarade so everybody is wearing masks. Romeo and his cousin Benvolio go to this party so that Romeo can get his mind off his love Rosaline. He is deeply in love with her. They show up and Capulet recognizes Romeo's voice. Romeo sees Juliet. He goes over to her and they kiss twice and fall in love. Romeo has to leave quickly after so that nobody sees a Montague and Capulet together. Juliet realizes that he is a Montague her families enemy. She doesn't care though because now she is in love. If her parents found out they would be so mad. They would want to kill Romeo. Juliet doesn't care. She is a little upset first when she finds out about Romeo but she isn't going to change her mind because she is in love.

Unfortunately that is a question that has no answer. Rosaline's role in the story of Romeo & Juliet was only meant to serve as a plot device for the telling of the story. Without having first loved Rosaline, Romeo would have never known what it was to fall in love with Juliet. It was simply through Rosaline that Romeo was able to get gain entrance into the Capulet's party, so that he could then catch a glimpse of Juliet in which he would fall in love with her. For instance, before Romeo knew Juliet, he hated the Capulets, as he was a Montague. It was the relationship he had with Rosaline that, and this is speculated through interpretation, caused Romeo to be able to view the Capulets through different eyes and begin to see with his heart, thus he didn't hate Juliet, and fell in love with her...in a love that was more mature than that which he had for Rosaline. Perhaps and earlier draft of Shakespeare's play might have set up the relationship between Romeo and Rosaline more thoroughly, in how they met.
