Liquid nitrogen has very low temperature, hence parts of flower which is having lot of water content gets solidified and become brittle and hard.

The best example of this is the classic liquid nitrogen demo - take something that is easy to damage but can be deformed or torn (a flower petal is what I saw, paper probably works too, or a leaf), dip it in liquid nitrogen, drop it, and it will shatter.
