Why does a guy say that he doesn't like you when all the signs are there?

Those so-called "signs" are things that can mean he likes you. Whether he does or not is a completely different matter, that's why asking is the only way to really find out. Though note that there might have been circumstances when you asked him that made him say something he doesn't mean. For example if he was around friends that he didn't want to know that he likes you, or if you caught him at an unfortunate moment. Ask him in private when he isn't somewhere else with his thoughts, and if he then says no he really doesn't like you, then you can be rather sure it's true.
