Because the male contribution to a fertilized egg is only a sperm. A sperm is a very small cell stripped of almost everything except the genetic material it is passing on and the necessary equipment it needs to get that genetic material where it needs to go. Cellular cytoplasm is not one of those things. Therefore, the egg, which comes from the mother, must provide all of the cellular structures, including cytoplasm, for the embryo.
