'Take' has many definitions, not all of them mean 'to obtain' or 'to gain into one's possession'. One definition is to make, or perform, basically, to 'do' something. "Take care" is a phrase that means to be careful, for example, not to obtain/steal 'care' from something.

Therefore caregiver and caretaker can mean the same thing; despite 'giver' and 'taker' being opposites in one sense, in this sense we have a 'giver of care' and 'someone who takes care of someone'.
