This might be the result of an increase in coolant temperature. Once the engine stops the coolant is no longer being circulated and cooled by the radiator but it is still picking up residual heat from the engine. Heated coolant expands and can sometimes overflow.
You might also have a bubble of air in the system. Try bleeding it. Or maybe the check valve in the pressure cap is bad.

The overflow tank for coolant will "boil" if there is air getting in the coolant chamber. This can be a head gasket going bad.
Add it in the overflow tank up to the max line.
