Dairy foods generally contain a great mix of nutrients which allow microbes to multiply quickly. E.g milk, cream and soft cheese are mixtures of water, milk sugars, fats and micronutrients which is a great combination for growing mold.
However, when you take the water out of a dairy product (such as in the case of hard cheeses such as Cheddar, Parmesan etc...) it will last significantly longer; microbes require water to grow.

i just found out it can be either. yeast, as you know, can help with cooking. mold makes some dairy products and tells you is food is good or bad. but mold can also ruin food.
