people say it has a blue tongue so it does not get sunburned
Giraffes use their tongues to draw leaves into their mouths when eating, so their tongues spend a fair amount of time outside their mouths. The dark color is simply pigmentation to protect their tongues from getting sunburned.

Giraffes are said to have blue tongues to provide their tongues with sun protection. Giraffes do not get much protection while grazing and eating high up in the top of the trees, therefore protection is needed.
