Preparing a Polynesian Luau.

Slow roasting a side of Bison on a spit.

Creating saffron from start to finish.

All of these are a combination of art and science that produce something special and almost magical if done properly. Science might be able to provide a shortcut or two but if employed the resulting product should probably be labeled with a warning label like:

  • Imitation.
  • Almost Like.
  • Pseudo.
  • Phony.

Genuine Maple Syrup includes a splash of History, a drop of Sweat. a ladle of Love, and a dollop of Dreams to make it an authentic gourmet product. Leave it alone, stick with your Karo and Mrs. Butterworth's and stay out of my sap house.
