The amount of lava erupted from a volcano is tiny compared to the amount of rock in earth's crust, and it quickly looses its heat to air and sometimes water. Trying to melt the earth with the amount of lava that volcanoes erupt would be like trying to melt an iceberg with a drop of water.

The superheated rock of the mantle is under enormous pressure, which keeps it from melting.

Obviosly they do melt time to time due to high temperatures and heat transfer from the magma or mantle melt to the techtonic plates. But it is very uncommon because by the distance between the end of the convection current and techtonic plate are so great it is uncommon for them to melt and it is more likely for the plate of the earth to harden the mantle than it is to melt the techtonic plate

They do melt, but only in the crust and at sometimes the crust/mantle boundary. Below that the pressure overcomes the temperature, keeping the mantle rock in a solid but plastic state.

The metal of the outer core (below the mantle) is melted too, but in the inner core the pressure again overcomes the temperature and the metal of the inner core is solid.

The outside of the volcanic structure is not being subjected to the same temperatures as the inside of the volcano and is insulated from the heat of the lava by previous layers of solidified magma.
