Enzymes are designed to work at their optimum pH. This is the level at which they will work the fastest.

If the pH around an enzyme becomes too high or too low, the protein structure of the enzyme will be denatured. This is a irreversible effect, and the enzyme cannot carry out its function, and is thus useless (you can think of it as dead)
