Because a gas barbecue while being convenient and impressive just does not have the same heat source and as a result smoke that gives barbecues their unique flavor. Some of the flavor in the things cooked on a barb comes from the smoke of the wood being burned.

Charcoal:

Many people tend to go easy on the charcoal and don't add enough. For a really hot grill, you're going to need more charcoal. There's an advantage to using charcoal that requires lighter fluid.

  • If your grill isn't hot enough or the coals seem to be dying out sooner than you want, you can just add more charcoal at any time during grilling.
  • If you are using ready-to-light charcoal, you can't add more ready-to-light charcoal, but you can add regular charcoal during cooking.

Gas:
  • Check to see if you have the gas turned on high.
  • When gas in the tank gets low, your grill may not get as hot as it should.
  • Make sure the gas lines are clear and not blocked with something. They can get stopped up.

Your barbecue grill does not work because there is some dust and may be you used for long time and it may be stucked with some chicken or some food.there may be some blocks in that grill.
