Because a gas barbecue while being convenient and impressive just does not have the same heat source and as a result smoke that gives barbecues their unique flavor. Some of the flavor in the things cooked on a barb comes from the smoke of the wood being burned.

Real barbecue is not simply throwing on a sauce - that's what people who've lived up north their whole lives usually think of as barbecue. Barbecue involves seasoning the meat with rubs and smoking it, generally speaking. Grilling is simply cooking over hot embers.
Typically, there are some metal tongs for hot dogs and other meats, a scraper for cleaning the barbecue, and occasionally there will be additional tools such as a thermometer for checking meat, and a metal burger flipper.
