Why does only the one demon on Supernatural have yellow eyes and the rest have red?

Yellow Eyes is supposed to be special. According to the episode titled Sin City in season three Yellow Eyes' true name is Azazel. He was sent as a general of sorts to begin the demon take-over of the mortal plane. The other demons on the series actually have black eyes. The red eyed demons presumably are the cross road demons such as the one Dean made a deal with in order to revive Sam at the end of season two.

Warning! Spoiler for the last season! No. Although there were episodes, where demons possessed Sam, he is not a demon. The possessed people are only vessels. And although Lucifer possessed him at the end of the last season, he is an Angel. An Angel in the vessel of a demon seems a little unnatural.
