Why does race cars have just one seat?

There would be no reason whatsoever to have another seat. The driver drives the car in a race and a passenger would only be extra dead weight. The exception to this are Rally cars & trucks. There is another seat occupied by a navigator who is constantly talking to the driver informing him or her of upcoming curves, hills, and road conditions.
