Because it has a high water content. Foods with high water content (such as dairy, fruit etc...)allow bacteria to move around and breed quicker than those with low water contents (such as dried fruit).

There is a simple scientific reason for this. When cheese enters air it oxidizes and causes mold to grow inside the cheese. When it starts growing it turns the cheese into the equinoctial of rat feces.

It may be because of fat. Fat apparently deteriorates faster. Actually fat attracts other levels of growth, fermentation for example
