This is because the carbon dioxide contained in the drink puts it under higher pressure than normal. The higher pressure, the colder it need to get before it actually freezes.
When you open up a very cold container (Below 0oCelsius) then this pressure is released and crystallisation starts. Ice will begin to form.
Like most things, a soda can has microscopic holes that allow traveling of air, although it would be years before all of the liquid would evaporate through a tiny microscopic hole. So that doesn't happen unless someone has a soda bottle that's in their pantry or something and has preservative in it so it doesn't go bad for several years. Then that could happen. I want to personally ask you (politely, don't worry, and I think you sound prett interesting:))
