I agree (with the previous contributor) that its unlikely that you'd want to deflate it but can see that it may be occasionally required; for example packing the ball when taking it on a trip or moving house. If this is required, take the pump and needle that you'd use to inflate it and stick the needle into the valve on the ball. Do not pump. Simply press the needle into the valve (you may have to move it around a little to find the correct position) and you should start to hear a gentle hiss. Apply a light pressure to the ball and it will eventually deflate. Note that the valves on balls are designed to be one-way so while it will deflate it will not do so quickly like a balloon, it may need anywhere up to 15-20 minutes to deflate.
