There's no real theological answer to that question. They just sort of developed that way, from rounded hats, to hats with a valley in the middle, and to hats with more of a valley in the middle, to hats with big points. BTW the official name for a bishop's hat is a mitre.
One possible answer is that they evolved from the crowns of laurels that ancient Roman athletes were given when they won a race. The bishop is leading his flock, so he is out ahead in the "race".

In the Catholic Church, Bishops, Archbishops, and Cardinals wear the pinkish red hats called a biretta (pronounced ba-ret-a). The biretta, a 4 cornered hat, has 3 points which refers to The Trinity. See this biretta.
I don't think the Holy Father's hat's point has a name. The "hat" you usually see him in is a miter (or mitre, it is spelled both ways), all bishops wear one when vested (in liturgical vestments).
